
our host rick is doin the diplomate thing again tonight – heh its been four days since Mcginty blew out of town – so we are hanging out with some new spices and familiar ingredients continuing the stylization of our own Mumbai kitchen.
eggplants were overflowing in the market today – and the madras sambar masala package literally leaped off the shelf at our neighbourhood depanneur. as for the kidney rajmah – margaret recognized the photo on the spice box as something akin to a treat we were served on a banana leaf on the train to Hampi in mid November ....

three healthy eggplants
four onions
4 substantial cloves garlic
discretionary green chillies .... fry till eggplants succumb
cup of coriander and tomatoes
pinch of salt ............................ cook till tomatoes are hanging
two tablespoons madras sambar masala .... i woulda done 1.5 or less
kidney rajmah
two onions
250 grams red kidneys soaked or canned .... convenient 1/2 kg bags
four tomatoes
pinch of salt
20 grams of rajmah masala
